Raw vegan oat cookies!

This recipe makes approximately 30 cookies (but I made 28)

Ingredients:
100g coconut sugar
100g cashew/almond butter
100g quinoa flour
½ teaspoon baking powder
100g rolled oats (I used Quaker bcus yum)
1 tablespoon maple syrup
1 teaspoon ground cinnamon (or a spice of your choice)

Instructions:
  1. Preheat your oven to 180ᵒ
  2. Mix the oats and quinoa flour together until the oats are coated and there are no lumps of flour
  3. Add the cinnamon and baking powder and mix thoroughly again
  4. Heat a pan and melt the cashew butter, coconut sugar and honey until it forms a runny, gloopy mixture (be careful not to let the sugar burn by stirring it straight away until it melts, it shouldn’t take long)
  5. Combine this gloopy mixture together with the flour and oats
  6. Form into balls and evenly space them on lined baking trays
  7. Place them in the oven for 15-20 minutes
  8. Don’t overcook them, they will feel super soft when you take them out of the oven but they will harden on cooling (trust me on this one)
  9. Place the crisp-crunchy creations on a cooling rack and leave to cool for about 10 minutes
  10. Enjoy (guilt free!)
