My yummy homemade Granola

040 french vanilla almond granola

This scrumptious recipe for my own granola is surely one for your list of things sweet things to try! With as little prep time of 10 minutes (minus cooking time) it is so easy to make a batch on a Sunday evening whilst prepping my other meals, which in turn sets me out for a week of yummy, divine breakfasts  (plus I get to snack on the odd walnut or too in the process!!)

80g rolled oats
100g coconut oil
170g maple syrup
1tsp vanilla extract
2tsp cinnamon
230g walnuts, roughly chopped (almonds work well too)
What to do
1. Preheat your oven to 150ºC
2. In a mixing bowl combine the syrup, coconut oil, vanilla extract and cinnamon
3. Heat this mixture in the microwave for 30 seconds to soften, the whisk until the ingredients are well combined

4. Add the oats and nuts and stir thoroughly until they are fully coated in the gooey mixture (feel free to add in any ther nuts/seeds of your choice)

5. Spread the mixture on to a lined baking tray and bake for 25 minutes (or until golden brown) at 150ºC
6. Allow to cool on a cooling rack and break up into pieces of your chosen size.
