As promised here is my very own version of one of my fave gluten free, single serving delight mug cakes, it really is so scrummy I just had to share it with you all! However I think I must have gone ott with the baking powder as I opened the oven to an erupting tureen, but I have to say the smell was pretty delightful, so maybe just go easy on the baking powder!
1 medium banana
3tbsp wholemeal/oat flour
1tsp hazelnut chocolate spread/almond butter
2tbsp coconut milk (or any vegan sub)
A ‘sprinkle’ (literally) of baking powder
What to do
1. Set your oven to 200°C
2. In a blender whisk together the banana, flour, hazelnut butter, milk, and a little sprinkling of baking powder
3. Pour this gooey mixture into a mug for the generic ‘mug’ cake, or small oven proof dish (I used a little ramekin and the mixture fitted perfectly)
4. Place in the oven to cook for approximately 15 minutes -give or take depending on the intensity of your oven- (After 15 minutes mine wasn’t quite cooked in the middle so I microwaved it for about 30 seconds and it seemed to do the trick!)
5. Top with yummy sweet toppings of your choice I chose blueberries and frozen raspberries but banana and nut butter is also very tasty!
